How many people grew up on meatloaf and mashed potatoes? This a great tasting loaf, without the meat and without the fat! Make some mashed potatoes and gravy with it and enjoy some comfort food! I tend to find a recipe and tweak it to my liking, or even combine ideas from various recipes. This one was inspired from trying The Happy Herbivore's Hippie Loaf! My loaf has the taste of Thanksgiving to me so I make a "no chick'n" gravy to go with it.
Ingredients (For 4 people)
- 15 ounce(s) can of black beans rinsed
- 2 tablespoon(s) low sodium soy sauce
- 1 tablespoon(s) ketchup
- 1 teaspoon(s) thyme
- 1/2 teaspoon(s) sage
- 1 medium onion diced
- 3 cloves of garlic crushed
- 1/2 red pepper diced
- 2 stalks of celery, chopped small
- 1 cup(s) mushroom, chopped coarsely
- 3 tablespoon(s) whole wheat flour
- 1 cup(s) cooked quinoa
Mash black beans in a bowl. Mix in the rest of the ingredients until well mixed. Transfer into the bread pan. Spread into pan and pat down with a spatula. Bake 1 hour, or until firm and browned. Let it cool for about 15 minutes or until firm. Slice and serve! Topping with a little gravy and serving with mashed potatoes and fresh steamed veggies is my favorite way to serve!
*can be made gluten-free by using rice flour in place of whole-wheat flour.
