Quick & Easy Vegan Mac & Cheese

Blend a cashew based vegan cheese sauce into perfectly cooked macaroni pasta for a delicious lunch or dinner meal. Watch the video to see how easy it is to make.

Ingredients:

  • 2 yellow potatoes, peeled and chopped into 1-inch pieces
  • I carrot, peeled and chopped into large pieces (similar in size to the potatoes)
  • ¼ white onion (not chopped, but separate the layers)
  • ½ cup raw cashews
  • 1 tsp onion powder
  • 1 tsp of salt
  • Pasta of your choice (It looks like one-pound cooked pasta)

Instructions:

  1. Boil potatoes for 2 minutes.
  2. Add carrots to the pot, cook for 5 min.
  3. Add onion and boil for 7 more minutes, or until soft.
  4. Remove vegetables and save 1 ½ cups of the water.
  5. In a separate pot cook the pasta according to the package directions.In a blender or food processor blend together the cashews, the reserved water, the vegetables, and all seasonings.
  6. Pour over the pasta and enjoy.
