Blend a cashew based vegan cheese sauce into perfectly cooked macaroni pasta for a delicious lunch or dinner meal. Watch the video to see how easy it is to make.
Ingredients:
- 2 yellow potatoes, peeled and chopped into 1-inch pieces
- I carrot, peeled and chopped into large pieces (similar in size to the potatoes)
- ¼ white onion (not chopped, but separate the layers)
- ½ cup raw cashews
- 1 tsp onion powder
- 1 tsp of salt
- Pasta of your choice (It looks like one-pound cooked pasta)
Instructions:
- Boil potatoes for 2 minutes.
- Add carrots to the pot, cook for 5 min.
- Add onion and boil for 7 more minutes, or until soft.
- Remove vegetables and save 1 ½ cups of the water.
- In a separate pot cook the pasta according to the package directions.In a blender or food processor blend together the cashews, the reserved water, the vegetables, and all seasonings.
- Pour over the pasta and enjoy.
